The Winner is: Buttermilks Biscuits (Recipe)

I’ve never owned or used a stand mixer before, so I asked my readers what I should bake first. I got some great ideas and ultimately decided to go with my favourite buttermilk biscuit recipe.

I let the stand mixer do all the work and it was wonderful! It took so much less time, and it was fun for me to use. Afterward, all the parts of the mixer cleaned up easily.

Here’s my favourite buttermilk biscuits recipe, given to me by a friend. I had been in search of something that tasted like the scrumpdillyicious biscuits at the Cracker Barrel, and this is the closest recipe I’ve found.

Buttermilk Biscuits Recipe
2 cups flour
4 tsp baking powder
2 Tbsp sugar
1/2 tsp salt
1/2 cup butter
1 egg
2/3 cup buttermilk (or any combination of plain yogurt, sour cream + milk)

Mix dry ingredients and then cut in margarine. Mix wet ingredients separately, then add to flour mixture. Mix till blended, and turn onto floured surface. Knead a few times to make smooth dough. Pat/roll out to 1 inch thickness. Cut into rounds, and place on ungreased cookie sheet. Bake @ 400 F for 10 minutes or until golden brown.

The recipe doesn’t make very many, so I usually double or triple it so I have a few dozen, especially since they disappear like magic in our house. I let the stand mixer mix the dry ingredients and then I let it cut in the butter for me. I did mix the eggs and buttermilk together before I added it to the mixer. I have used this recipe with plain milk as well, but it tastes best with buttermilk.

What shall I bake first?

It’s arrived! If you’ve been chatting with me on the Homeschooling in Nova Scotia Facebook page, you’ll know that my electric mixer “died” a few weeks ago. I’ve been wanting to get a stand mixer for some time now and many of you helped me make the decision on buying one (and it really helped that I got it for 60% off). Here it is!
